Tasting Notes: Our purpose at the Adega do Cantor is to make wines that reflect the warmth, colour and diversity of our region; wines to partner fantastic cuisine. The pinnacle of our red winemaking efforts is made from mature vines carefully grown on free draining sandy loam / red clay soils; this wine is handpicked from selected blocks of vines and then batch fermented at cool temperatures in open lagars with gentle robotic cap plunging. It is then matured in new and nearly new French and American Oak barrels for 18 months followed by 6 months bottle maturation prior to release.
