Península de Setúbal
Grape Varieties: 100% Merlot
Alcohol: 14% Vol.
First harvest: 1986
Winemaking: Entirely produced from the Merlot grape variety, grown in calcareous clay soils found at a vineyard on the gentle slopes of Azeitão. The combination of the location of these vines, the soil in which they grow, and the climatic conditions of the Arrábida region allow one to obtain this grape variety which has a strong local personality.
The Merlot grapes ripened and were harvested in the first week of September, followed by a classic fermentation, which was slow and controlled.
Ageing: 16 months in new French Allier oak casks.
Tasting notes: It presents very ripe fruit notes, almost fruit preserve, combined with chocolate and spices. In the mouth, it is full, with very ripe fruit and fine tannic elegance, a firm style, giving it a complex and very persistent structure.
Gastronomy: Meat, game and cheese.
Serving temperature: 16-18°C
Packaging: The storage or keeping conditions of the wine are very important if we want to preserve the wine's characteristics and guarantee a regular evolution for a long time. The storage place should guarantee:
- temperature around 10º-12º;
- some ventilation to avoid fungus proliferation;
- should allow the horizontal disposal of the bottles;
- absence of oscillations and vibrations;
- absence of unpleasant odors;
- bottles should be away from light;
- relative humidity should be high.
