Winemaking: Made with 100% Chardonnay grapes grown on our vineyard "Cova da Ursa", located at the top of the slopes above Azeitão. The calcareous rocky soil and the mild Arrábida mesoclimate allow the fruit to develop and ripen slowly with sufficient natural acidity.
Ageing: 5 months in new French oak casks
Tasting notes: Golden greenish full-flavored Chardonnay revealing layered complex fruit aroma, butter and toast, with well-integrated oak, a soft acidity and impressive persistence.
Gastronomy: Strong flavoured fish dishes or game bird. Also Azeitão cheese.
Serving Temperature: 10-12°C
Packaging: The storage or keeping conditions of the wine are very important if we want to preserve the wine's characteristics and guarantee a regular evolution for a long time. The storage place should guarantee: - temperature around 10º-12º; - some ventilation to avoid fungus proliferation; - should allow the horizontal disposal of the bottles; - absence of oscillations and vibrations; - absence of unpleasant odors; - bottles should be away from light; - relative humidity should be high.
